White Bean and Kale Soup

I wanted to make soup and I wanted something different than what I usually make, so I went through my pantry to see what I had on hand.

I found the beans, broth, tomatoes and potatoes (in the freezer), the only thing I decided I needed and didn’t have was the kale.

So I started with getting the beans a quick start and headed to the store for kale.

When the beans were ready I put them in my soup pot along with  frozen diced potatoes, covered them with a carton of chicken broth and brought it to a simmer. I added salt, pepper, onion powder, a few red pepper flakes and some turmeric.

I’ve been trying to add turmeric to quite a lot of my foods, its so healthy for you!

When the potatoes were tender I added diced fire roasted tomatoes, a little more broth, chopped kale and left that simmer for about 15 minutes and it was done!

I don’t usually eat a lot but I devoured a full bowl of this soup!!

White Bean and Kale Soup

Half a bag of small white beans, about 8 oz

2 cups diced frozen potatoes

1 32 oz carton chicken broth, plus more if you want to thin the soup as it cooks

1 cup fire roasted diced tomatoes, I use canned

About 1 big handful of chopped kale

Salt & Pepper to taste

A few red pepper flakes

1/2 tsp onion powder

1/2 tsp turmeric, optional

Soak beans, drain and place in soup pot along with the potatoes, pour in the broth and bring to a light simmer.  Add spices, cover and let simmer until potatoes are tender. Stir often.

Add tomatoes and kale, let the soup simmer lightly for another 10-15 minutes.  Add more broth as you prefer to keep soup from getting too thick.

A housecleaning schedule??

I have read, with excited interest, various pins on Pinterest regarding a cleaning schedule.

Monday do this, Tuesday do that.  I have even given it a try, it never works for me. It makes complete sense to block out time each day to do a few household chores. If we have a schedule, we will stick to it and chores will get done right?

Yea well not for me. I’ll get an invitation to dinner, or I’ll be too tired, or something…

I sit down Sunday evening with my planner and notebook and make a list of things that didn’t get done on the weekend and everything that needs done for the week. I love crossing off chores as they’re completed through the week.

Yea I still have an evening after work where I’m too tired or I meet someone for dinner but I just pick one thing from my list that needs done, finish that small chore and cross it off!!

Towards the end of the week, I usually have a small panic attach after reading over my list, and then I’ll start highlighting the most important chores. It’s my way of giving myself the evil eye and a warning that I better get moving or else!!!

And by Friday if I still have items on my list, which by the way…..I always do, I just save it for the weekend.

Now, I’m single living with just my pup, that does not shed by the way, I don’t have small children that live with me but I do have grandchildren. So yea it’s a little easier for me to keep things tidy.

Life is way to short to worry about cleaning that doesn’t get done! There are friends and family to hang out with, hobbies to enjoy, dogs to walk, yanno?  I still love a clean spotless house, my house is picked up and neat but it might not pass the white glove test…..and that’s okay with me.

If those cleaning schedules work for you, that’s great!  I’m envious that those planners work for you and wish they did for me.

Shopping at the Dollar Store

Some people wrinkle their noses at the mere mention of shopping at the dollar store. If that’s you, have you given any of the dollar stores a chance??  Dollar Store, Dollar General, they’re all pretty much the same.  Okay, sure one store has everything marked at $1 and the other might be a little bit more but it’s still extremely a buck or two!!

And if you’re like most of us these days, you have to do what you can to save.  The older I get, the wiser I become and the cheaper I get too!!! I’d love to retire in about 10 years so I’m super careful about how I spend my money.

When I need wrapping paper, gift bags, tissue paper or bows and ribbon, I’m heading to the dollar store. The selection is usually really nice, but for Christmas it’s the best value for your ….. dollar!!

Holiday decor, ornaments, and crafts; seriously you can’t beat it!!! Sure it’s not Pier One or Pottery Barn but with a little imagination, spray paint, and glue you can have some super cute decor!!!

Anytime I need paper plates and napkins for a party or girls night I hit a dollar store. They have a variety of colors and for holiday gatherings the selection is usually  quite nice.   Same thing for party items; straws, balloons, crepe paper and tablecloths, you can make out like a bandit!!

I get my doggie poop bags, trash bags, batteries…. Oh and the hardware section isn’t bad either, be sure to check it out.  Certainly isn’t your top name brand tools that you want from Sears but nails for pictures, screw drivers, etc for just your basic home needs, it’ll work!!

Candles, tape, picture frames.  Need to organize closets and drawers? Foil baking pans and freezer containers?  Stop at the $ store first! You’d be amazed at what you can find and make work!!

I like to shop for little stocking stuffers, especially for the grandkids. And for gift bags for adults , if you’re looking for little things to add to the gift you can surely find some things that will work.

Lucky for me there’s one of these little treasure stores beside my grocery store so it’s easy to make a run through before I hit the big store.

So, next time you need to shop, stop at one of the many dollar stores in your area first.

Selling & Buying a New Home, around the Holiday

My condo sold! Yay!! I’ve been a little busy running around looking at houses.
There just aren’t enough hours in the day right now. Working, looking at properties, and then going home to pack a box or two.
And speaking of packing, how does one person accumulate so much stuff!!! I didn’t think I had much to pack….until I started putting stuff in a box. Wow. Really, just wow.
I will try to keep up with my posting but it’s really been a challenge just trying to survive right now, and keep my eyes open throughout the day. I’ve not been cooking too much although I have a ton of things I want to cook!!
So, I’m not finding anything that I’m actually falling in love with. And can afford on my own. My next step, is to look for an apartment if I can’t find a new home. That will accept cats.
My nerves seem to be a little frazzled right now. It’s the Christmas season and I cannot decorate, no tree this year. My gifts are in bags sitting with boxes that have been carefully packed. (*insert sigh😔)
Please say a prayer for me that I soon find my new home. Oh, and as I’m cleaning out my kitchen I’ll want to use up some food in the pantry, I’ll try to get those recipes posted as quickly as I can. Hopefully I’ll get some yummy stuffed shells made this weekend!

Scrambled Egg Muffin Cups

Or maybe they’re little mini frittatas!!  Whatever you want to call them, they are a nice little treat!

I eat egg whites every morning. Every. single. morning. Needless to say I sometimes get bored with them. So I decided to do something a little different, even though it includes the yolks, it’s a nice change!

I bake these on Sunday and it works out that I have 5 single egg muffins, so I’m covered thru the work week for breakfast.

I put 4 whole large eggs in a bowl and whisk them, I added 2T of light cream, you could use half and half or milk. Salt and pepper to taste, add hot sauce if you like!

Next, I tore up spinach and tossed that in, stir to mix in but don’t over mix at this point.

I then ladle the egg mixture into the muffin tin. Top each one with about 1T of your favorite shredded cheese. Don’t forget the bacon!!! I cooked about 3 or 4 strips of bacon, crumble that up and top each cup.

Bake at 325 for about 20 minutes or until the egg is cooked.

There are so many variations to these little frittata cups!!! Your creative imagination can shine!! Smoked salmon, ham, BLT, but I’m thinking adding breakfast potatoes would be the best!

They are easily reheated in the microwave for a few seconds or eat cold as you dash out the door!! These are also great to serve for a brunch. And I’m sure this would work for your kids to eat on the way to school.
