Roasted Red Pepper and Goat Cheese Tart

 This recipe kinda just happened.  Thought of it.  Made it.  Love it!

I took a 9-1/2 inch square sheet of puff pastry, foled over all the edges to form a lip and put it on a pizza stone that was drizzled with olive oil.  Oh, and pour yourself a glass of wine.

Next I drizzled a light amount of olive oil on the pastry , then about 3 tablespoons of tomato sauce.

Now comes the fun part.  I used about 1 cup of a jar of roasted red peppers, torn into pieces and laid them out in all their glory on top of the tomato sauce.  Salt and pepper.  You could add a little garlic if you wanted. 

Dot with goat cheese.  I used about a 1/3 cup, you can go crazy here, add as much as you want!

Bake at about 375 for oh maybe 20 minutes, or until the pastry is golden around the edges.  Keep an eye on it, you won’t want this to burn.  Turn the oven light on, sit in a comfy chair with your wine and just patiently wait for this to be done…..

Just before taking it out of the oven, roll up and chop some fresh basil leaves.  I ended up with about 3 heaping tablespoons, but then I love basil!  when the tart comes out of the oven drizzle the basil on top. Cut, serve and enjoy baby!!!

You could definitely dress this up with chopped mushrooms, olives, whatever your little heart desires.
