Chicken and Avocado Quesadilla

I love quesadilla’s!  You can make so many variations, they are quick and easy to prepare, and
they’re great to take to work for lunch.

I needed to use up some chicken and avocado so I turned it into a quesadilla.  First I made 2 strips
of turkey bacon.  I used a little olive oil and fried them in the pan I planned to use for the quesadilla. I need the
bacon to be more on the crispy side since it needs to be crumbled.  You might as well make 3 slices because you
know you are going to eat one as soon as it comes out of the pan!

Next I took a whole wheat tortilla shell and spread refried beans on half the shell, toss the shell in the hot pan  (turn
the heat to a low medium
) bean side up.

Sprinkle a very light layer of shredded cheese, your favorite of course.  There is a prepackaged brand that I love, it’s a blend of Italian cheeses that I always have in the fridge, I use it on everything.  Well almost everything, definitely not ice cream and cookies!  Then top the shell with some shredded chicken, crumbled bacon, chopped tomatoes (seeds removed), chopped avocado, and a sprinkle of Montreal Steak Seasoning.

Add a second layer of shredded cheese.  Fold over the other half of the shell over and press lightly.

Remove from the pan and cut into 3 pieces, top with salsa and sour cream.  Make 2, one for now, one
for lunch tomorrow.  This is great for entertaining also, make a plate of them and watch them disappear!
